Steps

  1. 1

In a 12- or 14-inch skillet, wide enough to hold shrimp in a single layer, heat oil over medium heat until shimmering. Add onion, bell pepper, and chile pepper and cook, stirring occasionally, until softened, 3 to 5 minutes. Add garlic, cumin, coriander, paprika, and pepper and cook, stirring occasionally, until fragrant, about 30 seconds. Stir in tomatoes, tomato paste, and salt and cook, stirring occasionally, until slightly thickened, about 2 minutes. Add water and bring to a simmer over medium-low heat. Cook until sauce thickens and tomatoes are completely softened, 3 to 5 minutes.

  2. 2

Add shrimp and butter and gently toss to coat. Cook until shrimp are pink and opaque throughout, 3 to 5 minutes. If sauce becomes too thick, add additional water, 1 tablespoon at a time, until sauce lightly coats shrimp.

  3. 3

Remove from heat and stir in lemon juice. Transfer to a serving platter and top with cilantro leaves and lemon wedges or slices. Serve immediately with bread or rice.
