Ingredients

For 10 people

  • 1 tbspground flaxseeds
  • 3 tbspwater
  • 0.5 cupunsweetened soy milk
  • 0.5 cupgranulated sugar
  • 0.25 cuplight brown sugar
  • 0.5 cupunsweetened applesauce
  • 0.25 cuprefined coconut oil
  • 2 tsppure vanilla extract
  • 1.75 cupall-purpose flour
  • 2 tspbaking powder
  • 1 tspground cinnamon
  • 0.25 tspground nutmeg
  • 0.25 tspsalt
  • 1medium zucchini
  • 0.5 cupraw walnuts

Steps

  1. 1

Mix the flaxseeds with water in a large bowl. Set aside.

  2. 2

Coarsely grate the zucchini using a box grater*.

  3. 3

Place the grated zucchini in a kitchen towel. Twist into a ball and squeeze out as much liquid as possible to make the zucchini as dry as possible. Set aside.

  4. 4

Grease a 4½ inch x 8½ inch (11½ x 21½ cm) loaf pan, then line the bottom with a piece of parchment paper. Preheat the oven to 175°C (180°C)**.

  5. 5

Add the remaining wet ingredients to the large bowl containing the flax mixture. Mix.

  6. 6

Then sift in all of the dry ingredients. Mix until just combined.

  7. 7

Gently fold the zucchini and walnuts into the batter. Be careful not to overmix.

  8. 8

Transfer the batter to the prepared loaf tin and bake in the oven on the centre rack for 70 to 75 minutes, or until a wooden skewer inserted into the center comes out clean.

  9. 9

Let the bread cool for a few minutes in the loaf pan before transferring it to a wire rack to cool off completely. Enjoy!
