When cooking, we often end up with veggie scraps that aren’t suitable for certain dishes. While composting is great, turning them into homemade broth is even better. Just freeze your scraps until you’ve collected enough for a batch - it’s a simple, flavourful way to reduce waste. Good scraps include bits from garlic, onions, carrots, mushrooms, celery, leeks, green beans, tomatoes, bell peppers, zucchini, squash skins, corn, eggplants, potatoes, and herbs. Avoid cruciferous veg like broccoli, cauliflower, kale, and cabbage, as well as onion skins, which can turn the broth bitter. Beet scraps and red onion skins may darken the broth.

Ingredients

For 6 people

  • 6 cupboiling water
  • 2medium onion
  • 4 clovegarlic
  • 2medium carrot
  • 2celery rib
  • 4 cupvegetable scraps
  • 0.5 cupfresh parsley
  • 0.5 cupfresh cilantro
  • 2bay leaf
  • 0.5 tbspwhole peppercorns
  • 1 tspsalt

Steps

  1. 1

Add all the ingredients to a large pot over medium-high heat.

  2. 2

Stir, bring to a boil, reduce to a simmer, and cover the pot with a lid. Let simmer for one hour. Note: avoid a too-rapid simmer and do not let it simmer for too long, as this may result in a bitter broth.

  3. 3

Turn off the heat and scoop out the vegetables using tongs or a slotted spoon. Press down on the veggies with the back of a spoon to extract as much liquid as possible.

  4. 4

Place a mesh sieve over a large bowl, and strain the broth through it to catch any remaining small pieces.

  5. 5

Let cool off completely before storing it, or use it immediately for a soup recipe. Enjoy!
